Bar Agurico is an authentic bar located in Tachikawa City.
While it offers the atmosphere and quality of a classic cocktail bar, it stands out for its unique vegetable-based cocktails, made with locally sourced produce. This creative twist has earned it a loyal following and sets it apart in the local bar scene.
Owner and bartender Keisuke Morita has a rich background in managing authentic bars in central Tokyo and Tachikawa. His journey took a unique turn when he participated with Art in FARM, a local event held since 2007 at Inoue Grape Farm in Tachikawa. The event aims to preserve and utilize urban farmland through art and music, featuring local wine made from the farm’s grapes and food made with city-grown vegetables.
Inspired by the experience, Morita created original vegetable-based cocktails using locally sourced ingredients, which were a hit with event-goers. The positive response sparked the idea of opening a permanent location. Soon after, he launched Yasai no Shot BAR Agurico, a bar offering cocktails made primarily with local vegetables and fruits.
Today, Bar Agurico has evolved into a full-fledged authentic bar that blends classic cocktails and service with Morita’s creative, farm-to-glass approach. The name “Agurico” is derived from the Italian word agricolo, meaning “agricultural,” reflecting the bar’s deep connection to the land and its produce.
There’s no fixed menu at Bar Agurico.
Instead, guests are encouraged to talk with owner and bartender Morita about what they’re in the mood for. Based on your preferences, he’ll craft a personalized cocktail just for you.
The day’s featured “vegetable cocktails” are listed on a board behind the counter, with ingredients like daikon radish, shiso leaves, myoga ginger, burdock root, sweet potato, fresh ginger, basil, and even Ogasawara-grown midi tomatoes. Each item sparks curiosity: Daikon? Burdock root? It’s a delightful exploration of flavors you won’t find anywhere else.
The daikon cocktail is made by slow-pressing fresh, seasonal daikon using a slow juicer.
After letting the juice sit for a while to reduce its sharpness, it’s used as a mixer. You can still taste the distinct flavor of daikon, but without any bitterness or pungency. The sweetness of DITA, a lychee liqueur, balances it perfectly—resulting in a refreshing, blue-colored cocktail with a crisp, clean finish.
When developing new cocktails, Morita often draws inspiration from classic recipes. “For this one, I was thinking along the lines of a traditional China Blue,” he says. Each cocktail is crafted with thoughtful technique and attention to detail—an impressive reflection of his expertise as a seasoned bartender.
